Chilled Beet-Cantaloupe Soup ala Nita

| 2 lb. | beets or. equivalent canned cut beets |
| | butter or oil |
| 1 medium | vidalia or sweet type onion, peeled, chopped |
| 2 clove | fresh garlic, crushed, peeled, minced |
| 1/2 tsp | salt |
| 1/4 cup | granulated sugar (to taste, optional) |
| 1 | cantaloupe, seeded |
| | juice and zest of 2 fresh lemons |
| 1 cup | fresh orange juice |

| cook and peel beets or use canned beets. cut into quarters and set aside. |
| cook onion in 1 tbsp. butter or oil until somewhat translucent. add garlic |
| for last minute. do not brown garlic or it will be bitter. puree onions |
| and beets in food processor. seed cantaloupe and scoop it out and puree it |
| with the beets. season with lemon juice and salt. add orange juice and |
| chill. (ice cubes will chill quickly -- substitute them for the water) |
