Loaf pan Spinach Three Cheese Lasagna

| spinach three cheese lasagna (4 servings) |

| 4 | sheets no-boil lasagne |
| 1 | 10 ounce) package frozen or 1 lb fresh spinach |
| 1 small | onion, minced |
| 1 | garlic clove, minced (1 teaspoon) |
| 1 Tbsp | oil |
| 1 cup | pasta sauce |
| 1 cup | ricotta cheese |
| 1/2 cup | shredded mozzarella |
| 1/4 cup | grated parmesan cheese |
| 1 | egg |
| 1 tsp | sugar |
| dash | cinnamon] |
| 1/4 cup | shredded mozzarella or 1-2 slices |
| | cooking spray |
| |
| spinach filling: |
| saute onion & garlic in oil 1 minute. |
| add frozen drained spinach |
| saute until most of the moisture is absorbed, if using fresh, just |
| saute until wilted. |
| |
| cheese filling: |
| blend the egg with the ricotta, mozzarella & parmesan and add cinnamon. |
| |
| assembly |
| spray the loaf pan with cooking spray |
| pour a few tablespoons of sauce on the bottom of the pan. |
| layer 1 piece of lasagne, a third spinach mixture, a third cheese |
| mixture, another piece of lasagna then spinach & cheese, then repeat. |
| top with last slice of lasagna, pasta sauce and mozzarella. |

| baking |
| bake covered with foil for 45 minutes. |
| remove cover last 5 minutes to brown. |
| let stand 8-9 minutes before serving. |
