Spinach and Cheese Casserole

| at eight servings, this double-cheese combo makes the perfect side dish for |
| roasted meats or poultry, but you also can serve it as a hearty meatless |
| main dish for four. |

| 2 cup | cottage cheese |
| 1 | 10ounce package frozen chopped spinach, thawed and well drained |
| 1/3 cup | crumbled feta cheese |
| 3 | eggs, beaten |
| 1/4 cup | butter or margarine |
| 3 Tbsp | all-purpose flour |
| 2 tsp | minced dried onion |
| dash | ground nutmeg |

| grease a 1-1/2-quart casserole; set aside. in a large bowl, combine cottage |
| cheese, spinach, feta cheese, eggs, butter, flour, onion, and nutmeg; mix |
| well. transfer mixture to the prepared casserole. bake, uncovered, in a 350 |
| degree f oven about 45 minutes or until center is almost set (an |
| instant-read thermometer inserted in center should register 160 degrees f). |
