Grilled Ham and Sweet Potato Kabobs

| 1-1/2 to 2 lb. | cooked ham, cut in 1 to 1 1/2-inch cubes |
| 2-1/2 lb. | fresh sweet potatoes, cooked, peeled, and cut in 1 1/2-inch |

| 1 medium | green pepper, cut in 1 1/2-inch squares |

| thread cubed ham, sweet potatoes, and green pepper squares alternately on |
| 6 skewers. brush kabobs with apricot honey glaze (below). grill over |
| medium coals for 15 to 20 minutes, on in a 350 deg oven for 20 t0 30 mins. |

| 1/2 cup | apricot preserves |
| 1/2 cup | honey |
| 3 Tbsp | lemon juice |
| 1/4 tsp | allspice |
| 1 Tbsp | cornstarch |
| |

| combine all ingredients in a small saucepan. cook over medium heat, |
| stirring constantly, until thickened and clear. makes about 1 cup of |
| glaze. baste ham kabobs during the cooking or grilling. |
