Microwave Scalloped Potatoes

| 3 | eggs |
| 1 cup | milk |
| 4 | good sized potatoes |
| 1/2 | onion |
| 1/2 | green pepper (optional) |
| 1 tsp | salt |

| place milk and eggs in the blender. chop. blend until the potatoes are |
| pea size chunks and pour into a casserole. microwave 15-18 minutes. lay a |
| slice of ham over the top during the last 5 minutes. top with cheese. |
