Scalloped Potatoes

| potatoes are a heartland staple, along with other root vegetables |
| including carrots, turnips and rutabagas. scalloped potatoes are |
| a favorite, and this recipe shows how you can enjoy them without |
| the extra fat often found in traditional scalloped potato recipes. |

| 8 medium | potatoes, thinly sliced |
| 1 large | onion, chopped |
| 2 Tbsp | all-purpose flour |
| | salt and pepper |
| 2 cup | hot low-fat milk |
| 1 cup | shredded fat-reduced cheddar cheese |
| |
| spray 13x9-inch baking dish with nonstick coating. arrange |
| one-third of the potatoes over bottom; sprinkle with half of the |
| onion, then half of the flour. season with salt and pepper to |
| taste. repeat layers; arrange remaining potatoes over top. pour |
| hot milk over. sprinkle with cheese. |

| bake, uncovered, in 350f oven for 1 hour or until potatoes are tender. |
