| 1 | 3 ounce package cream cheese -- softened |
| 1/4 cup | orange juice |
| 1/8 tsp | salt |
| 2-1/2 cup | powdered sugar -- sift if lumpy |

| sift flour; measure; sift twice again. beat egg whites until frothy; |
| sprinkle salt and cream of tartar over top and continue beating until |
| stiff, but not dry. gradually beat in sugar, sprinkling about 2 |
| tablespoons at a time. gradually fold in flour, sifting about 1/4 cup at |
| a time over surface. divide mixture into 2 equal parts. to one part, add |
| vanilla, folding it in as gently as possible. to the other part, add |
| orange extract and egg yolks which have been beaten until thick and |
| lemon-colored. spoon into an ungreased tube pan (about 9" diameter), |
| alternating white and yellow mixtures. bake at 325°f. for about 1 hour; |
| remove from oven. invert pan; let cake stand in the inverted pan about 1 |
| hour or until cooled. |

| frosting: beat cream cheese, orange juice, and salt together. gradually |
| add enough powdered sugar to give a good spreading consistency. beat |
| until creamy. |
