reasonably easy sweet and sour chicken

| 1 | 8 oz.) can pineapple chunks, save juice |
| 1/2 cup | onion |
| 2 Tbsp | shortening |
| 1-1/2 cup | water, add to pineapple juice to make 2 1/4 cup. |
| 2 cup | carrots, sliced |
| 3 | chicken bouillon cubes |
| 1/4 cup | brown sugar |
| 1/4 tsp | ginger |
| 1/4 cup | catsup |
| 2 Tbsp | vinegar |
| 1 Tbsp | soy sauce |
| 3 Tbsp | cornstarch |
| 2 cup | diced chicken |
| 1 cup | green pepper |
| |
| melt shortening in frying pan. add onion then carrots and water mixture. |
| combine sugar, cornstarch, ginger, catsup, vinegar and soy sauce. stir |
| into |
| cooked vegetable mixture. cook until thickened. add chicken, green pepper |
| and pineapple. cover and cook 5 minutes. serve with rice. |
