Rhubarb Pie

| 1-1/2 cup | rhubarb, cut into 1/2 inch pieces |
| 3/4 cup | sugar |
| 1 | egg |
| 2 Tbsp | flour |
| 1 | double pie crust (recipe follows) |
| |
| mix sugar, egg and flour and add to rhubarb. place in between crusts in |
| pie plate and bake at 375 degrees for about 30 minutes. |

| easy roll pie crust |
| ~makes 3 double crusts, may be frozen for later use. |
| |
| 1 cup | lard or crisco |
| 1/2 cup | water |
| 1/2 tsp | salt |
| 3 cup | flour |
| |
| in a large bowl put the lard or crisco, water, salt and 1/2 cup of the |
| flour. beat well, then dump in the rest of the flour in and stir until |
| it's all mixed together well. form into 6 balls with hands and roll out |
| to fit pie plate. |
