cold chinese gingered cucumber

| 2 large | green cucumbers |
| 2 tsp | salt |
| 1 | level tablespoon grated green ginger |
| 1/2 cup | white vinegar |
| 3 Tbsp | white sugar |

| wash and peel cucumbers. score each cucumber from end to end using the |
| tines of a fork, so that each cucumber has ridges running down it. slice |
| cucumbers into thin rounds, and place in a bowl. sprinkle with salt, mix |
| through. let stand for half an hour. while cucumber is standing, combine |
| vinegar, sugar and green ginger in a cup. mix well. when cucumber has |
| stood for half an hour, drain excess liquid. pour vinegar mixture over, |
| stir through. chill before serving. |
