| 1/2 cup | shredded cheddar cheese |
| | salt and pepper to taste |
| | onion salt to taste |
| | allpurpose flour |
| | hot salad oil |

| drain salmon; remove skin and bones. flake salmon with fork. add next 5 |
| ingredients, blending well; shape mixture into croquettes. coat with |
| flour. |
| pan fry in hot oil until golden brown, turning only once. yield: 6 |
| servings. |
