Easy Black-Eyed Pea Salad

| 2 - 15 oz. | cans black-eyed peas, drained and rinsed well |
| 1/2 cup | minced green onions |
| 1/4 cup | diced red or yellow sweet pepper |
| 1/4 cup | diced celery |
| 1/2 cup | diced tomato |
| 3 Tbsp | red wine vinegar ( i like star brand) |
| 4 Tbsp | olive oil (or other salad oil) |
| 1 tsp | minced garlic |
| 1/4 tsp | freshly ground black pepper |
| 1/2 tsp | coarse salt |
| 1/4 tsp | cayenne pepper, or to taste |
| 1 tsp | tabasco sauce, or to taste |
| |
| toss well and let rest in refrigerator for at least 2 hours. |
| toss again just before serving. |
| serve with small wedges of lemon or lime and offer more tabasco sauce. |
