old fashioned southern tea cakes

| 1 cup | butter at room temperature |
| 2 cup | granulated sugar |
| 3 | fresh eggs at room temperature |
| 1/4 cup | buttermilk with 1/2 teaspoon baking soda stirred into it |
| 2 tsp | pure vanilla extract |
| | selfrising flour as much as it takes to make a stiff dough (try 3-1/2 cups |
| | to start) |

| preheat oven to 350 f. |
| cream butter and sugar. add eggs one at a time beating between each. add |
| milk, vanilla and flour. let set in refrigerator for two hours. roll out very |
| thin, cut and bake at 325 to 350 degrees f. depending upon your oven. bake |
| until lightly golden brown on bottom. remove to plates or rack to cool. |
