Peanut Butter Chicken

| 2-1/2 to 3 lb. | fryer, cut up |
| 1/4 cup | all-purpose flour |
| 1 | egg |
| 1/2 cup | peanut butter |
| 1 tsp | salt |
| 1/8 tsp | pepper |
| 1/3 cup | milk |
| 1/2 cup | fine bread crumbs |

| Coat chicken with flour. Blend eggs with peanut butter, |
| salt and pepper. Gradually add milk, beating with fork to |
| blend. Dip floured chicken in peanut butter mixture, then in |
| bread crumbs. Place in greased shallow baking pan. Bake at |
| 375 degrees for 1 hour until tender. Serves 4. |
