Curried Green Tomatoes

| 2 Tbsp | butter |
| 1/2 | onion, chopped fine |
| 1-1/2 tsp | curry powder |
| pinch | cayenne pepper |
| 2 cup | coarse-chopped green tomatoes |
| | salt |
| |
| Melt butter in a skillet, add onion and cook slowly until the onion is |
| transparent. Add curry powder and blend well. Stir on the cayenne pepper and |
| green tomatoes. Cook, stirring, for 3-4 minutes. Add salt to taste. The tomatoes |
| should be barely cooked. May be served hot or cold. Makes 4 servings. |
