Lemon Bars

| 1/8 tsp | salt |
| 1 cup | butter |
| 1/2 cup | powdered sugar |
| 2 cup | flour |
| | filling |
| 5 | eggs -- beaten |
| 2-1/2 cup | sugar |
| 5 Tbsp | flour |
| 5 Tbsp | lemon juice |
| 1 tsp | lemon rind -- grated |
| |
| Preheat oven to 325 degrees for a glass pan or 350 degrees for a metal pan. |
| Blend all crust ingredients and press into greased 9" x 13" pan. Bake 18 |
| minutes. Meanwhile beat all ingredients of filling. At end of 18 minutes, pour |
| filling over crust and bake 25 minutes longer. Sprinkle with extra powdered |
| sugar. Cut into bars when almost cool. Store well wrapped in refrigerator. |
| Will keep well for several days. |
