SCALLOPED POTATOES

| 15 lb. | sliced potatoes |
| 3 | qts hot milk |
| 1 lb. | margarine |
| 4 Tbsp | salt |
| 1-1/2 tsp | pepper |
| 3/4 cup | flour |
| |
| Parboil potatoes for 2 minutes - (boiling). Place in well greased baking dish. |
| Dredge lightly with flour - add salt, pepper and butter to hot milk and pour |
| over potatoes. Bake at 350 degrees about 1 1/2 hours. Serves 50. |
