RIPE PLANTAIN MINCE PIE

| 5 large | ripe plantains |
| 2 cup | string beans, cooked |
| 6 | eggs, beaten |
| 3 cup | mince meat for stuffing |
| 2 Tbsp | oil |
| | salt to taste |

| Slice the plantains lengthwise. Fry them until golden. Beat the eggs and |
| add salt to taste. Grease the bottom and sides of a baking pan. Add half |
| of the eggs so as to cover completely the bottom. Arrange half of the fried |
| plantain slice in the pan, spread half of the string beans and then add the |
| mince meat to cover the beans. Spread the rest of the beans and cover |
| completely with the remaining fried plantains slices. Cover the pie with |
| eggs and bake in a moderate oven for 30 minutes. |
