Slow Cooker Beef Fajitas

| 1-1/2 lb. | beef flank steak |
| 1 cup | chopped onion |
| 1 | green pepper, cut into strips |
| 1 | jalapeno, minced fine |
| 1 Tbsp | cilantro, snipped small |
| 2 clove | garlic, minced |
| 1 tsp | chili powder |
| 1 tsp | ground cumin |
| 1 tsp | ground coriander |
| 1/2 tsp | salt |
| 3 or 4 | roma tomatoes, skinned, seeded and chopped |
| 12 large | flour tortillas |
| | toppings sour cream, guacamole, shredded cheddar cheese, salsa |

| cut flank steak into 6 portions. combine meat, onion, green peppers, |
| jalapeno pepper, cilantro, garlic, chili powder, cumin, coriander and salt |
| in crock-pot. add tomatoes. cover and cook on low for 8-10 hours or on |
| high 4-5 hours. remove meat from crock-pot and shred with 2 forks. |
| return meat to crock-pot. stir. to serve fajitas, warm tortillas on hot |
| dry skillet on both sides and keep warm between a clean teatowel you have |
| folded in half. spread meat mixture into flour tortillas and add any or |
| all of the toppings. roll up filled tortilla and enjoy. yields 12 |
