Rhubarb Pie

| this is a family favourite. we have a rhubarb patch in our garden. |

| 4 cup | rhubarb, cut into 1-inch slices |
| 1-2/3 cup | sugar |
| 1/2 cup | all-purpose flour |
| dash | of salt |
| | pastry for 2-crust 9-inch pie |
| 2 Tbsp | of butter |
| |
| combine 4 cups 1-inch slices rhubarb, 1 2/3 cups sugar, 1/2 cup |
| all-purpose flour, and a dash of salt; let stand 15 minutes. |
| meanwhile, prepare pastry for 2-crust 9-inch pie; line 9-inch pie plate |
| with pastry. fill with rhubarb mixture. dot with 2 tablespoons of |
| butter. adjust top crust, cutting slits for escape of steam; seal; |
| flute edges. |
| bake at 400 degrees f for 50 minutes. cool on wire rack. |
