Beef and Potato Casserole

| here is one we do to feed the five of us , and it give plenty of left |
| overs |
| too |

| 10 | peeled sliced and parboiled potatoes |
| 3 lb. | browned ground beef |
| 1 large | onion chopped |
| 4 clove | garlic |
| 1 tsp | dried oregano , marjoram , or thyme , or fresh herb of |
| | choiceor a blend |
| | salt and pepper to taste |
| 1 | block of grated pepper jack cheese |
| 1 | block of grated cheddar cheese |
| 3 - 4 Tbsp | extra virgin olive oil |
| |
| brown off beef , add onion and garlic and herbs and salt and pepper , |
| saute till onion is translucent. layer in a greased deep casserole dish, |
| potatoes, ground beef mixture, and cheese, repeat till all ingredients are |
| used up. top with remaining cheese, bake at 350 degrees, for 45 mins |
